My 512GB Xbox Series S is always out of space.+

That is the known limitation — the 512GB Series S has only about 364GB usable, and modern games are large, so it fills fast. Add the official Storage Expansion Card for more current-gen space (a card matches the internal speed), delete games you have finished since they re-download from your library, and move older Xbox One/back-compat games to a cheap USB drive, which can even play them directly. The 1TB Series S was released partly to address this.
